Hi, I'm Penne. I'm a wife and mom of three. When I almost died in 2021, I was determine to give my kids all the tools they needed in life, starting in the kitchen. I am an avid foodie and of course, married one. I love to cook and our whole family loves to eat, so I'm teaching my little foodies what I know. We hope that our story and videos inspire others to get their families in the kitchen and make memories.

Today on our family vlog, I got to pass down a this family recipe for White Pork Enchiladas. Then I found this killer 7 Layer Dip to go with it.

It made me so happy to do this video with Paige. My grandma had taught me to make these enchiladas like 20 years ago. She's passed away when Paige was 2 1/2, so to be able to pass the recipe on to her made me all mushy inside. I love these enchiladas so much and so does the rest of the family. We devoured them. 🤤 They are so easy! Especially with the Instant Pot! You know I love it. Made a frozen solid pork roast in 3 hours. Juicy, tender and shreddable.


This is a recipe I used to make all the time but don't make it enough now. It's great for a big crowd. Paige was excited to learn it. I'm sure she'll call me a million time, when she's older, asking how to do it again. I did with my grandma. Fortunately she taught my mom how to make it and I would call her. Now it's etched in my mind. I was expected to have memory loss after the stroke. Thank God I didn't, I would be calling my mom again. 😂


She barely remembers GG as we called her. My Grandma was a wild woman! I know where I got my spark! She commanded a room, not based on looks, don't get me wrong she aged gracefully, but she was in her 80's. No her spunk and humor. We have a little dark humor in our family and if she was here she'd jump right in. I always tell the kids I already died once what do I have to do to get you to listen! What???? Read my bio page, it will make more sense. I can hear Grandma's last words to me about how proud she was of me. Excuse me, I'm go cry now.


On the side, I wanted a change from your typical rice 'n beans. I found this 7 Layer Dip and 🤤. It was so stinkin' good. I've seen recipes and even store bought ones for years but never really thought to try it myself. Man am I glad I took the leap. So flavorful. We licked the bowl clean. To say the least I will be making it for weekend BBQ's and parties.


What a treat for Paige, not only did she get passed down a family recipe but she (and I) got to put a crowd pleaser, in our books. Seriously though this dip was so easy to make and it's so pretty. Gotta make sure you use a glass side see threw bowl so you can really appreciate it. People will be impressed when this shows up - like how did you do that??? I know that's what I thought when I saw the recipe. Paige was impressed. 🤣

Below are the recipes, the way they worked for us.

Ingredients

3 cups shredded pork, cooked

1 package taco seasoning

2.5 cups Mexican cheese

1 cup milk

1 cup sour cream

8 oz cream cheese

2 tbsp flour


Instructions

  1. In a big pot, over medium heat, combine milk, sour cream, cream cheese and flour. Watch carefully because it will boil over, you just want the cream cheese to melt.

  2. Add taco seasoning and diced green chiles with shredded pork and combine, then mix in 1 ½ cups of the Mexican cheese.

  3. Add a heaping spoonful of meat mixture to a tortilla, roll it up and place it crease down, in a greased casserole dish.

  4. Repeat until all tortillas and filling has been used. Pour white cream sauce over the top of the naked enchiladas. Sprinkle with remaining Mexican cheese and black olives.

  5. Bake for 20 minutes.
